Default Avoiding the sunset crowds: Is a Santorini daily catamaran charter worth the upgrade?

My husband and I are heading to Greece this September for our anniversary. We definitely want to do a sunset cruise around the famous caldera, but we've heard horror stories about the standard tourist boats packing 40+ people shoulder-to-shoulder. We are thinking about upgrading and booking a private Santorini daily catamaran charter instead. I found a boutique agency that specializes strictly in multihulls, and the idea of having our own massive deck space and a private local crew sounds like a dream. For those who have done a private day sail here, does the skipper usually let you customize the route? We’d love to hit the Red Beach and the Hot Springs earlier in the day before the massive tour groups arrive. Would love to hear your experiences!
